Avocados are a vegan dream! They are so rich and creamy and decadent and full of healthy fats. You can use them in savoury cooking and in desserts. They’re everything you could ever want in a fruit. As I was whipping up some Blackbean-Stuffed Sweet Potatoes for dinner last week, I knew I needed a fresh and tangy sauce to go with them. I had limes and I had avocados. They’re pretty much a match made in heaven. I had some cilantro too. So together they went into the blender and thus creamy avocado cilantro dressing was born!
This recipe is incredibly easy – fewer than 10 ingredients and just 5 minutes to make. The main components are avocado and lime, of course, but there’s also fresh cilantro, high-quality olive oil, maple syrup, and a few spices. All you have to do is toss everything in a blender or food processor and blend until silky smooth. You can add more or less water depending on the consistency you’re looking for (e.g. spreadable vs. pourable).
That is seriously it! It will probably take you fewer than 5 minutes to pull together. You can use this creamy dressing on anything – salads, roasted vegetables, to top off a rice bowl, in sandwiches, or on Blackbean-Stuffed Sweet Potatoes like I did. It’s incredibly versatile.
