White bean soup in an aromatic herb broth with hearty potatoes and savoury vegan Italian sausages. Mmm! This soup is perfect to cozy up with on a cold winter night. I must admit that I am not a big fan of fresh herbs, but this recipe was a request from my husband, so I had to oblige. And I’m so glad I did! I used a combination of fresh thyme, rosemary, and sage to build the delicate herby flavours in this soup. I kept the herbs sparse, but that was a personal preference and you are of course free to up the concentration of fresh herbs.
I wanted to keep this soup simple so the fresh flavours weren’t overpowered, so I opted for simple navy beans and yellow-fleshed potatoes. Yellow-fleshed potatoes are my absolute favourite because the skins are thin and tender after cooking, so they don’t even need to be peeled. Bonus fibre!
To bulk up the soup even further, I added hearty home-made vegan Italian sausages. They are so simple to make as an easy addition to the white bean soup – simply get the sausages in the steamer about 10 minutes before you begin the soup and they’ll be ready by the time you need them.
The best part about this recipe is that it takes only 30 minutes to make and uses ingredients most people already have on hand, so it’s the perfect meal to make when you haven’t planned ahead and don’t know what to cook.
