Apple crumble is the epitome of fall comfort food. It’s warm, and sweet, and cinnamon-ey, and with a big scoop of vanilla ice cream on top, it just couldn’t get any better, right? Wrong! I discovered the one thing that brings apple crumble to the next level: another layer of crispy, crunchy goodness that’s better than the crumble itself. Introducing the delicious Apple Crumble Tart!
This recipe was actually a request by my lovely (omnivorous) aunt. She loves apples and cinnamon and asked me to make a vegan version of apple crumble for Thanksgiving (it’s in October here in Canada). I wasn’t 100% pleased with the final result, so, being the perfectionist that I am, I set out to flawlessly execute this recipe. I think I pretty much nailed it (if I may say so myself).
The apple crumble tart consists of three components: the crust, the filling, and the oat crumble topping. But don’t let that fool you into thinking it’s complicated. Each part of the recipe is quick and easy and comes together in a flash. You start by grinding the nuts into as fine a meal as your food processor will allow, then adding some sweet graham cracker crumbs, flour, sugar, and butter.
The crust gets packed into a tart pan (you could also use a regular pie dish) and baked until crispy and golden brown.
While the crust bakes, you can move on to preparing the apples for the filling and tossing them with delicious warm spices like cinnamon, vanilla, and nutmeg, and, of course, brown sugar for carameley sweetness. The first time I made the tart I used Granny Smith apples, but I’ve since switched to Golden Delicious apples. I find them a little softer after cooking, and sweeter, which means I could cut the added sugar in the filling by half.
The next step is my favourite part: the oat crumble! It’s as easy as mixing oats with flour, a little sugar, more spices, and heavenly vegan butter. It all goes on top of the succulent apple filling and is baked again, and then voila! A perfect apple crumble tart ready to serve! If you want to be super fancy, you can even add vanilla nice cream and a homemade caramel sauce.
