Everyone goes crazy for pumpkin in the fall. Pumpkin-spice lattes, pumpkin pie, pumpkin loaf, and a million other pumpkin-themed dishes. I am no exception when it comes to going crazy over pumpkin, so I definitely wanted to create a dessert where pumpkin is the star. I love cookies. A lot. A box of Oreos doesn’t last more than a day in my house. Pumpkin chocolate-chip cookies were the obvious choice.
The starting point for this recipe was Chewy Chocolate-Chip Cookies, which are the perfect chocolate-chip cookie, if you ask me. Other pumpkin cookie recipes tend to have a cake-y texture and turn out more like cookie-shaped muffins rather than chewy cookies. After a few failed attempts, I discovered the secret – you need to drain all of the water out of the pumpkin. You have to squeeze it and squeeze it and squeeze it until it’s as dry as possible. A necessary step, believe me. Unless of course you enjoy cake-y cookies, then by all means do not drain your pumpkin.
These cookies are slightly crispy on the outside, moist, chewy, chocolatey, perfectly spiced, and bursting with pumpkin flavour. And the best part is that they take only 20 minutes to make, start to finish! Pretty amazing, right?
